Make a batter using besan (gram flour) with turmeric, salt and kashmiri red chilli powder.
Heat oil in a pan temper with mustard seeds,green chillies turmeric and few curry leaves.
Add boiled potatoes fry it little bit and mash it properly.
Sprinkle some salt and mix it. Keep it aside to cool.
Make round balls coat it with the besan batter and deep fry it.
Garlic chutney:
Heat oil in a pan add about 12 garlic cloves 1/4 cup of peanuts fry little bit
Add 3 tbsp of sesame seeds; saute for a minute and remove the pan from heat.
Add 1 tbsp of kashmiri red chilli powder, 1/4 tbsp of coriander powder, 1 tsp salt, 1/4 cup dried grated coconut mix it and fry it again for a bit.
Grind it to coarse mixture.
Assemble:
Take a pao and dust it with garlic chutney
Put the vada and dust in some more chutney .
I had added little bit of tamarind date chutney (store bought). But that’s optional if you want you can put it because it brings a tangy flavour.
