Sattu Kachori & Aloo Sabzi (No onion & garlic)

Sattu Kachori:


Ingredients for kachori dough:


Maida-2cups

Salt to taste

Oil- 2tbsp


For filling:


Sattu-1cup

Onion-1

Ginger- 1

Garlic-1

Ajwain (carom seeds)-1tsp

Lemon juice-2tbsp

Kashmiri red chilli powder-1/2 tsp

Green chillies-2

Salt to taste

Sugar-1/2 tsp


Method for Sattu Kachori:


  • Prepare the dough with the above-mentioned ingredients. The dough should not be too hard or too soft. Keep it aside for 30 mins.

  • Grate the onion/ginger/garlic/green chillies together.

  • In a mixing bowl prepare the filling with the ingredients mentioned (under 'filling' title) with little water.

  • The consistency should such as to form a laddu.

  • Divide the mixture in equal portion.

  • Make small balls out of the dough and fill it with the mixture.

  • Roll it like puri and deep fry it.


Aloo sabzi (no onion no garlic)


Ingredients:


Potatoes (boiled )-3-4medium size

Tomatoes- 2

Ginger-1

Green chillies-2

Turmeric powder-1/2tbsp

Coriander powder-1tbsp

Kashmiri red chilli powder-2tbsp

Salt to taste

Sugar -1tsp(optional)

Kasuri methi-1/2tsp

Cinnamon-1

Cloves-3-4

Cardamom-2

Mustard seeds-1tsp

Methi-1/2tsp

Cumin seeds- 1tsp

Mustard oil- 3-4 tbsp


Method for Aloo Sabzi:


  • Make a paste of tomatoes, ginger and green chillies.

  • Heat a kadai or wok with the mustard oil.

  • Temper it with all the whole masalas.

  • Pour the tomato paste.

  • Add coriander powder, kashmiri red chilli powder and turmeric powder.

  • Add some crushed kasuri methi.

  • Add salt and sugar. Sugar is optional, we Bengalis love a pinch of sugar in everything we cook 👨‍🍳 it can be omitted.

  • Add hot water to let it boil for 5-7 mins or till it reaches its desired consistency.

  • Top it with fresh coriander leaves.
